Nearly all Mexican bean and meat recipes call for generous amounts of cumin (called "comino" in Mexican recipes), as do foods of various other Latin American countries. As in, when I cook with this cumin, I get compliments! I grind these whole cumin seeds as needed in my spice grinder. The flavor is so much better than any other cumin seed I've tried before. My go-to from now on.
TheSpiceHouse cumin seeds are my cumin of choice, and I grind it with a Krups spice grinder. Prior to grinding my own I bought ground cumin from TheSpiceHouse and I remarked to a friend "I thought I knew what fresh cumin was". It was excellent, and I can recommend it if you do not grind your own.
This is fabulous for Indian, Turkish, and Latin American cooking.
Next to whole black peppercorns, chili powder, and a handful of other spices or spice blends, whole cumin seed is one of the most important spices in my entire pantry. There is nothing like toasting your own cumin seeds, letting them cool, then grinding them into a course powder, and using them in everything from homemade taco seasoning, to making hummus, and all kinds of other great stuff. The flavor is not even close to comparable to the store-bought stuff, and I always have whole cumin seeds on hand. Human is easily in my top five favorite single spices on Earth, and I do my best to keep large quantities of the stuff on hand. The flavor and Aroma is incredibly vibrant and intense, compared to anything else you'll find anywhere.
