A Trinidadian man came into our shop once claiming that his mother made the very best fried chicken on the entire island. So we mixed up Trinidad Spice blend--a gingery-garlicky-lemony-with-a-hint-of-clove blend--on the spot from the ingredients he remembered.

Details

This simple, yet classic seasoning is good for fried fish, grilled chicken wings, steaks or hamburgers or salads. For the marinade, mix about 1 tablespoon spice with 1/2 cup oil and 1/2 cup vinegar. Pour it over a whole chicken and marinate it overnight before cooking. Try substituting various liquids and oils to provide interesting variety! To use as a dry rub seasoning, just sprinkle on 1 teaspoon per pound of meat before grilling.

So delicious and versatile

This is our go-to sprinkle for grilled chicken thighs. Fabulous that night and the leftovers make either wonderful addition to a pasta dish or shredded on top of a naan pizza with pesto, kalamatas, and feta.

Love this spice, especially on fish/shellfish. I use it on haddock, halibut, and shrimp. And on chicken at times as well.

Asparagus Baby!

I grill up asparagus on my flat top griddle and then I use this blend as a finisher on top of asparagus. It is beyond amazing! Sometimes I marinate the asparagus ahead of time with some olive oil, lemon juice and a touch of Worcestershire before grilling them, but that is not necessary.
