BARBECUE SAUCE
INGREDIENTS
• 1 tbsp bacon grease
• ½ medium onion, diced
• 3 cloves garlic, chopped
• 1 (15 oz) can tomato sauce
• 3 tbsp tomato paste
• ¼ cup apple cider vinegar
• ¼ cup molasses
• ¼ cup brown sugar
• 2 tbsp Worcestershire sauce
• 1 tbsp liquid smoke
• 1 tbsp yellow mustard
• 1 tsp Spice House Ground Chipotle Chilies
• ½ tsp freshly cracked Spice House Tellicherry pepper corns
INSTRUCTIONS
1. In a medium saucepan, heat oil over low heat. Add 1 tbsp tomato paste, the garlic and onion and cook, stirring, until softened.
2. Add remaining ingredients and simmer on low about 5 minutes, stirring.
3. Remove from heat and use an immersion blender to blend sauce until smooth, or let sauce cool to room temperature then pour into a blender and blend until smooth.
4. Return to pan and turn heat back on low. Let simmer until thickened.
