Rosemary spice is used in abundance throughout European cuisines. But, it’s popularity for use with lamb and chicken have gained it a place in American cooking. This cracked rosemary comes from putting whole rosemary through a grinder to reduce the size to about 1/4 inch pieces. This makes them much more palatable for those who do not care for the barbs of the whole rosemary needles. Fresh grinding these needles makes a powder quite potent and well suited for sauces.

Cracked rosemary

Love this rosemary. Fresh is awesome but not easy to find at the grocery sometimes. This cracked rosemary is small enough to incorporate well but not pulverized to dust. I also like that there are minimal to no stem pieces to worry about. Oh, and it is fresh enough that it still looks pretty green whereas the grocery stuff is commonly a very washed out green and turning tan/brown..... Can't go wrong with this one.
