I was recently told I had to stay on the Acid Watcher diet. This means no onions or garlic - key ingredients to so many savory dishes. The diet author, Dr. Aviv, recommended using Asafoetida to replace that onion and garlic flavor. It works! Just remember that in order to achieve those flavors, Asafoetida must be cooked in hot oil or ghee before adding it to whatever you're making. When it hits the hot oil, the spice transforms from a not-so-pleasant smell to the aromatic scent, and taste, of the perfect blend of onion and garlic. Acid Watchers aren't supposed to use butter, so I use small amounts of olive or avocado oil with my Asafoetida. In fact, Asafoetida works beautifully for seasoning the olive oil that I use for my Acid Watcher pizza Margarita. No more bland food now that I've found Asafoetida! I'll definitely stay stocked up on this unique and flavorful spice!
