Yield: 4-6
Preheat oven to 300F. Line a baking sheet with parchment.
Blend salt, pepper and Spiced Vanilla Bean Sugar in a small bowl. Add to beaten egg white and mix to combine. Add nuts and stir to coat completely.
Spread nuts in a single layer on prepared baking sheet. Bake 20 minutes in preheated oven. Stir once making sure nuts are still in a single layer when finished. Nuts should be dry and medium browned. Let cool. Serve slightly warm or let cool. Store covered tightly at room temperature for one week. Makes 2 cups.

Made this last Christmas and put in jars for holiday gifts for my kids’ teachers. Big hit and I could barely keep them in my house. I ordered more Chicago Old Town Sugar Spice for this years batch :)
Tried this recipe out for Christmas – polished off the first batch in record time! Made 5 more batches and many, many friends passing these tasty nuts at parties throughout the season. The nuts, and the Old Town Sugar itself, are also great in oatmeal.
