Herbes de Provence Frittata With Zucchini and Goat Cheese

Preparation Instructions:
Preheat your oven to 375°F (190°C). Position the top rack for broiling.
In a medium bowl, whisk together the eggs, milk, Herbes de Provence, salt, and pepper until smooth. Set aside.
Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the shallot and sauté for 1-2 minutes until softened. Add the zucchini slices in a single layer and cook for 3-4 minutes on each side, or until golden and tender.
Spread the zucchini and shallots evenly across the skillet. Pour the egg mixture over the top, tilting the skillet to distribute it evenly. Sprinkle the crumbled goat cheese over the egg mixture.
Cook on a stove top and reduce the heat to low and cook the frittata undisturbed for 5-7 minutes, or until the edges start to set but the center is still slightly jiggly.
Transfer the skillet to the oven and bake for 5-7 minutes, or until the frittata is fully set and slightly puffed. For a golden top, broil for 1-2 minutes, watching closely to avoid burning.
Remove the frittata from the oven and let it cool for a few minutes. Pair this frittata with a crisp side salad featuring spring greens and a simple lemon vinaigrette. Enjoy!
