Anise
Anise seeds lend a fleeting and floral scent reminiscent of licorice. Spanish anise seed is popular in teas, biscotti, and candies, while star anise is popular in many savory, Southeast Asian recipes like pho. Although the two spices are completely unrelated, they both carry a licorice flavor profile due to their high concentration of anethole, the chemical that gives anise its signature flavor.
