Maple Garlic Sweet Potato Casserole
Preparation Instructions:
For the casserole:
Roast sweet potatoes at 400˚F until soft and then reduce oven temp to 350˚F. Wait until cool enough to handle and then peel off skins and mash in a large bowl. Add the rest of the casserole ingredients and mix until well combined. Transfer mixture to a 2.5-3qt casserole dish.
For the topping:
Brown butter with sage and rosemary in small saucepan over medium heat. Remove herbs and set aside to use as garnish. Mix all of the remaining ingredients together until thoroughly combined. Evenly sprinkle over sweet potato mixture.
Bake on middle rack until pecan topping is browned and toasty, approximately 35 mins. Garnish with reserved herbs.
