Greektown Chicken Salad
This is your classic savory (and just a little bit sweet) chicken salad. The juicy grapes is delicious alongside the Greek-style dressing and pulled chicken.

Yield: 4-6 servings

Ingredients

  • 1/2 cup mayonnaise
  • 1 lemon, zested and juiced
  • 1 1/2 teaspoons chives, finely chopped
  • 1 1/2 teaspoons flat-leaf parsley, finely chopped
  • 1 3-pound rotisserie chicken
  • 8 strips bacon, cooked and chopped
  • 1/3 cup red onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1 cup red seedless grapes, halved
  • 3/4 cup sliced almonds, lightly toasted

Preparation Instructions:

In a small bowl, whisk together the mayonnaise, lemon zest and juice, Greektown seasoning. Add the chives and parsley and mix gently.

Remove skin from the rotisserie chicken. Pull the meat from the bones and shred or chop it.

In a large bowl, combine the chicken, bacon, onion, celery, grapes and sliced almonds.

Add the dressing and fold together to combine. Season to taste.

If desired, serve with bread and red leaf lettuce.

More About This Recipe

Substituted chopped pistachios for the sliced almonds. It tastes wonderful.

I certainly do wish you would put out a book with all the information about spices, comparisons, recipes etc. just everything you have on your website. What a treasure that would be! Let me know when I can put my name on a list for one of the first copies!!

Really good and flavorful.
Warning however — 2 T of the Greektown seasoning makes the mayo sauce way too salty. (Unless I did something wrong). Next time I’ll start with 2 tsp of Greektown and slowly add more to taste.
